Who We Are…

Walnut Grove Farm, located in the beautiful green rolling hills of Tuscarawas County, Ohio, began in 1986, three years after owners Dave and Jennifer Kneuss first met at a local Farmer’ Market when Dave, a truck patch produce vendor, attempted to sell Jennifer a head of cauliflower. A week later, he asked her out for their first date…the rest is history! Now, the couple and their family of six children enjoy a simple life of sustainable agriculture on their family farm.

“Eating locally is doing what you can. It is about making the most of your region’s agricultural strengths. It is about beginning to pay attention.” =LocalHarvest.org

Purchasing Beef from Walnut Grove Farm…

In what quantities is beef sold?

Beef is sold by the half, or by quarters (rear or front). We also sell ground beef in bulk quantities.

What is the difference in the types of meat in front or rear quarters?

The rear quarter contains the most prime cuts, as you will see from the charts we’ve linked to below. Leanness is pretty uniform throughout. Some marbling (the fat throughout the meat) is necessary, of course, as that is what contributes to flavor. Our meat is typically quite lean, with minimum waste left in the pan after cooking. It is still very flavorful. Link to chart of retail cuts of beef: http://www.iabeef.org/Content/RetailCuts.aspx

How does “hanging weight” translate to “packaged meat final weight?”

Your meat will be purchased by the pound, hanging weight. This is the weight of the whole beef after it is prepared to be cut into retail cuts. The following link explains this process:
